Ingredients
  

  • 1 medium cauliflower head chopped into florets
  • 2 tablespoons tahini
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove minced
  • 2 tablespoons lemon juice freshly squeezed for best flavor
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Water as needed for desired consistency

Instructions
 

  • Prepare the Cauliflower: Start by steaming the cauliflower florets until they are tender. This usually takes about 8-10 minutes. If you’re short on time, you can also microwave the cauliflower with a splash of water in a covered bowl for 5-7 minutes until soft.
  • Blend the Ingredients: Once the cauliflower is tender, transfer it to a food processor. Add the tahini, olive oil, minced garlic, lemon juice, cumin, salt, and pepper. Blend the mixture until it is completely smooth, stopping to scrape down the sides of the bowl as necessary. This should take about 2-3 minutes.
  • Adjust the Consistency: If the hummus is too thick for your liking, gradually add water, one tablespoon at a time, until you reach your desired consistency. The goal is to create a creamy, spreadable dip.
  • Serve and Enjoy: Transfer the cauliflower hummus to a serving bowl. Drizzle with additional olive oil and garnish with a sprinkle of paprika or fresh herbs, such as parsley or cilantro, if desired. Serve with fresh vegetable sticks, pita chips, or as a spread on wraps.

Notes

For added flavor, try using roasted garlic instead of raw, and consider garnishing with sesame seeds or a drizzle of balsamic glaze for a gourmet touch.
