- 1 cup rolled oats
- 1 cup grated carrots about 2 medium carrots
- 1/2 cup medjool dates pitted
- 1/2 cup unsweetened shredded coconut
- 1/2 cup walnuts or pecans
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- Additional shredded coconut or finely chopped nuts optional coating
Prepare the Ingredients
Wash, peel, and grate the carrots using a box grater or the grating attachment on your food processor.
Make sure your dates are pitted. If they're a bit dry, soak them in warm water for about 10 minutes to soften, then drain.
Blend the Dry Ingredients
