- 8 oz 1 cup of cream cheese, softened
- 1/2 cup plain Greek yogurt
- 2 cloves garlic minced
- 1 tablespoon lemon juice
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley or basil for garnish optional
Roast the Red Peppers
Preheat your oven to 450°F (230°C).
Wash the red bell peppers and place them on a baking sheet lined with parchment paper.
Roast for 20 minutes, turning halfway through, until the skins are blistered and charred in spots.
Remove from the oven and immediately place the peppers in a bowl covered with plastic wrap or in a sealed zip-top bag. This steams the peppers, making the skins easier to peel. Let them sit for about 10 minutes.
Once cooled, peel off the skins, remove the stems and seeds, and set the roasted peppers aside.
