  • 2 medium zucchinis
  • 1 large carrot
  • 1 small onion
  • 1/2 cup of spinach optional
  • 2 large eggs
  • 1/2 cup all-purpose flour or gluten-free flour
  • 1/4 cup grated Parmesan cheese optional
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

  • Prep the Veggies: Start by washing your zucchinis, carrot, and spinach. Cut the zucchini and carrot into chunks, then peel the onion.
    Now, grab your food processor! Attach the grating blade or use the chopping function if you prefer smaller bits.
    Place the zucchinis, carrots, spinach, and onion in the food processor and pulse a few times until everything is finely chopped or grated to your liking.
    If your food processor bowl is small, you may need to do this in batches.
  • Drain Excess Moisture: Here’s a crucial step: once your veggies are chopped or grated, transfer them to a clean dish towel or cheesecloth.
    Squeeze out as much moisture as possible. Zucchinis and carrots hold a lot of water, and removing it is key to getting crispy fritters!
  • Combine the Ingredients: In a large bowl, whisk together the eggs, flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
    Add the drained veggies and stir until everything is well combined. If the mixture seems too wet, add a little more flour until it holds together.
  • Fry the Fritters: Heat a tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, scoop about 2 tablespoons of the veggie mixture into the pan and flatten it slightly with the back of a spoon to form a patty.
    Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Be sure not to overcrowd the pan — cook them in batches if necessary.
  • Drain and Serve: Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Serve them hot with your favorite dipping sauce, or enjoy them as is!

  • To ensure crispy fritters, make sure to remove as much moisture as possible from the shredded vegetables.
  • You can customize the veggies based on what you have on hand. Sweet potatoes, cauliflower, or broccoli work well too.
  • For a gluten-free option, substitute the all-purpose flour with almond flour or chickpea flour.
  • If you're looking for a dairy-free version, simply omit the Parmesan cheese or replace it with a vegan alternative.
  • You can bake the fritters instead of frying them. Place them on a lined baking sheet and bake at 400°F for 20-25 minutes, flipping halfway through.
